CARMAN'S RIVER WILD DUCK | |
Wash and drain birds thoroughly. Place in roasting pan. Put sliced onions and celery tops and leaves inside birds. Sprinkle salt and pepper on. Place slices of fat salt pork over tops of birds. Put 2 inches of hot water in bottom of roaster and cook at 350 degrees in covered roaster for 1 hour. Finish uncovered for 1/2 hour. |
