BANANA CREAM WHIP 
2 eggs, separated
3 packets artificial sweetener
1/4 tsp. salt
1/2 c. warm water
1 env. unflavored gelatin
1/4 c. cold water
1 tsp. lemon juice
1 med. banana, mashed
1 tsp. rum extract

In a saucepan mix egg yolks, 2 packets artificial sweetener and salt. Cook over low heat slowly adding warm water. Cook for about 10 minutes, stirring often or until mixture is thick enough to coat spoon.

Soften gelatin in cold water and add to egg yolk mixture, stirring until dissolved. Stir in lemon juice. Chill until slightly thickened. Fold in mashed banana.

Beat egg whites until stiff but not dry. Add rest of artificial sweetener and rum extract, beating all the time. Fold egg whites into banana mixture; pour into individual dishes and chill.
