MACADAMIA SNOWBALLS 
8 tbsp. unsalted butter, at room temp.
1 c. all-purpose flour
4 tbsp. dark rum or brandy
1 tsp. vanilla
1/4 tsp. salt
1 1/4 c. finely chopped macadamia nuts
1 tbsp. shortening
1 c. powdered sugar for coating

Cream butter with electric mixer. Gradually add flour, rum, vanilla and salt. Add macadamia nuts by hand and mix thoroughly. Wrap dough in plastic wrap and refrigerate for one hour. Form balls 3/4 inch in diameter and bake on a greased cookie sheet. Bake at 300 degrees for 35 minutes. Cool slightly and roll in powdered sugar. Roll cookies a second time later so that they resemble snowballs. Makes 3 dozen.
