BAKED BEANS FOR A CROWD
6 lbs. navy pea beans
1 lb. salt pork
1 c. sugar
2 c. molasses
5 tbsp. salt
2 tbsp. dry mustard
1 1/2 tsp. pepper
2 med. onions, chopped

Soak beans overnight. In the morning parboil until the skins crack when blown upon. Score the salt pork rind, then cut a small portion of salt pork and place in bottom of a baking dish with the onions. Add the beans, bury the remainder of the salt pork on top of the beans. Mix the remainder of ingredients with 1 pint boiling water and pour mixture over beans, with enough boiling water to cover. Bake 12 hours at 375 degrees, adding more water as necessary. Makes 50 servings.

Remember when the dime was a week's allowance? Now it's primarily used as an emergency screwdriver!!
