ALL PURPOSE GOVERNMENT TESTED
APPLE PIE
 
CRUST:

2 c. white flour
2/3 c. shortening
1 egg
1 tsp. vinegar
1 tbsp. sugar
1/3 c. orange juice

Mix flour and other ingredients in a large bowl. Roll out dough on a floured board and form the lower crust in a pie plate.

Peel 5 to 6 apples (Macs or Cortlands) and slice. Place about half the apple slices in the pie plate and cover with 1/3 cup of sugar and cinnamon. Finish adding the rest of the apples and again cover with sugar and cinnamon. Add 2 teaspoons of lemon juice over the apples and then cover with the top crust. Dot the top crust with butter or equivalent. Place pie in a 400 degree F. oven for 25 minutes then reduce the oven temperature to 350 degrees F. and finish baking the pie for an additional 35 minutes.
