WHOLE WHEAT QUICK BREAD | |
2 c. whole wheat flour 1/2 c. firmly packed brown sugar 1 tsp. baking powder 1 tsp. baking soda 3/4 tsp. salt 1 egg, beaten 1 1/2 c. buttermilk 1/2 c. raisins 1/2 c. chopped pecans or walnuts Combine first 5 ingredients in a large mixing bowl; stir well. Add egg and buttermilk and mix well. Stir in raisins and pecans. Spoon into a greased and floured 8"x4"x3" loaf pan; bake at 350 degrees about 55 minutes or until a wooden pick inserted in center comes out clean. Yield: 1 loaf. |
