CHICKEN SUPREME 
3 whole chicken breasts (6 sides, skinned & boned)
2 eggs, slightly beaten
1 c. seasoned bread crumbs
3 tbsp. olive oil
6 slices mozzarella cheese
1 pt. heavy cream
1 c. Parmesan cheese, grated
2 tbsp. parsley, chopped
Salt & pepper to taste

Dip chicken breasts into beaten egg, coat with bread crumbs. Heat oil in frying pan on medium heat and fry chicken on both sides until lightly browned. Remove and place in baking dish, topping each piece of chicken with a slice of mozzarella cheese.

Mix together the heavy cream, Parmesan cheese, parsley, salt and pepper in a saucepan and cook until mixture gets hot and thickens. Pour over chicken and bake in a 350 degree oven for 25 minutes.
