Our guests really like these served around a campfire. They are done up ahead of time and heated on sight. These are great to have in the freezer to pull out for an elegant dinner. This recipe can be made to fit any amount. I will give it to you for one breast. 5 oz. boneless chicken breast, pounded skin side down to 1/4 inch Sprinkle each breast with: 1/2 tsp. poultry seasoning 1/2 tsp. rubbed sage On each breast place: 1 thin slice ham 1 thin slice Cheddar cheese 1 thin slice Mozzarella cheese Roll and secure with a toothpick. Roll in melted butter. Then in mixture of: 1 c. bread crumbs 1/4 c. Parmesan cheese 2 tsp. parsley Place in baking dish, seam side down and bake in 350 degree oven for 30 minutes. Mix cheese soup as per directions and pour over chicken. Bake 15 minutes longer or until cheese is hot and bubbly. Serve with rice. |
