CHINESE FRIED RICE 
3 tbsp. oil
2 eggs, beaten
3 c. cold cooked rice
1/2 lb. cooked chicken
2 c. bean sprouts
1 c. each sliced green onions & celery
1 sm. pkg. green peas
1 to 2 tbsp. soy sauce
1/4 tsp. pepper

Heat 1 teaspoon oil. Cook eggs without stirring, cut in strips. With remaining oil, add rice, cook 10 minutes, stirring frequently. Add chicken, sprouts, onion and celery. Stir fry 3 minutes. Add peas, soy sauce, pepper. Stir fry 2 minutes. Stir in egg.
