FITZ HIGH PEANUT PIE 
3 eggs
1/2 c. sugar
1 1/4 c. dark corn syrup
1/2 c. butter, melted
1/4 tsp. salt
1/4 tsp. vanilla
1 1/2 c. chopped, roasted unsalted peanuts
1 (9 inch) unbaked deep dish pastry shell

In a large bowl, beat eggs until foamy. Add sugar, corn syrup, butter, salt, and vanilla; continue to beat until thoroughly blended. Stir in peanuts. Pour into unbaked pastry shell. Bake at 375 degrees for 50-55 minutes or until set. Serve warm or cold. Top with whipped cream or ice cream.
