BLOND BROWNIES
1 cup sifted flour
1/2 tsp. baking powder
1/8 tsp. baking soda
1/8 tsp. salt
1/2 cup chopped walnuts
1/3 cup butter
1 cup packed brown sugar
1 egg, beaten
1 tbsp. vanilla extract
1/2 cup white chocolate chips

Preheat oven to 350°F.

Sift together flour, baking powder, baking soda and salt. Sift again. Add chopped nuts. Mix well and set aside.

Melt butter. Stir in brown sugar, mixing well. Add egg and vanilla. Blend well.

Add flour mixture, a little at a time, mixing well. Once the flour is in, do not overmix. Stir in white chocolate chips. Spread in a greased 9x9x2-inch pan.

Bake until a toothpick inserted in center comes out clean (or with slightly fudgy looking crumbs) - usually about 20-25 minutes.

Serve blondies warm so they will be soft with vanilla ice cream. Next day, freshen the brownies before serving by heating for about 20 seconds in the microwave (or til warm - not hot).

Since microwave ovens vary in power, you may need to adjust your cooking time.
