HANNAH'S CARROT CAKE 
Cake:

1 1/2 c. cooking oil
2 c. sugar
4 eggs, beaten
2 c. flour
1 c. chopped pecans
2 tsp. baking soda
2 tsp. cinnamon
2 tsp. baking powder
3 c. grated carrots

Beat oil and sugar together well. Add eggs and beat well. Sift flour, cinnamon, soda and baking powder together; blend with egg mixture. Fold in carrots and nuts.

Bake at 350°F until done about 30 - 35 minutes. Insert toothpick in center to check for doneness. If toothpick comes out clean, cake is done.

Cream Cheese Icing:

1 (8 oz.) pkg. cream cheese
1 lb. confectioners sugar
1 stick butter
2 tsp. vanilla

Blend cream cheese and butter, add confectioners sugar and vanilla. Mix well. Frost cake.
