VE'S OAT - BRAN MUFFINS | |
1/4 c. safflower oil 1 c. unbleached white flour 1/4 tsp. salt 1 egg 1 c. oat bran 3 overripe bananas (optional), mashed 3/4 c. brown sugar 2 tsp. baking powder 1 c. buttermilk 1 tsp. baking soda 1 c. raisins In a mixing bowl and with a wire whisk, combine safflower oil, brown sugar, flour, baking powder and salt. Add remaining ingredients and stir just until moistened. Fill paper-lined muffin cups 3/4 full with batter. Bake at 400 degrees for 20 minutes, or until toothpick comes out clean. Remove from tin and cool on wire racks. |
