1 lb. ground beef 1 can (16 oz.) whole tomatoes, drained and chopped 2 c. shredded Cheddar or Monterey Jack cheese 1 tsp. ground cumin 2 c. shredded lettuce 1 med. tomato, chopped Salt and pepper to taste 1/2 onion, sliced 12 corn or flour tortillas (6 or 8 inch) 3/4 c. Pace picante sauce 1/2 onion, chopped 1 jalapeno pepper, chopped 1 tsp. garlic powder Brown meat. Drain. Stir in tomatoes, picante sauce, cumin, onion, salt and pepper. Simmer 5 to 10 minutes or until most of liquid has evaporated. Cover bottom and sides of 14 inch pizza pan with tortillas and spread with meat mixture. Bake at 350 degrees for 20 minutes. Sprinkle with 1 cup of cheese and onion slices. Return to oven until cheese is melted. Arrange lettuce, remaining cheese and tomatoes over the top. Cut into wedges. Serve with additional picante sauce. Serves 4. 560 calories per serving. |
