BRAN MUFFINS 
3 oz. ready to eat bran flakes
1 1/2 c. whole wheat flour
1/4 c. granulated sugar
1 tbsp. double-acting baking powder
1 c. milk
1/3 plus 2 tsp. butter, melted
1 egg, beaten

Preheat oven to 400 degrees. In medium bowl, using a fork, combine cereal, flour, sugar and baking powder.

In 1 cup measure, thoroughly blend milk, butter and egg. Add milk mixture and stir with a fork to combine.

Using a non stick muffin pan, spoon in equal amounts of batter to each cup. Bake for 15 to 20 minutes until muffins are browned. Remove muffins to wire racks to cool. Makes 12.
