STILTON VINAIGRETTE 
2 tbsp. white wine vinegar
1 tbsp. dijon mustard
1/4 c. olive oil
2 oz. Stilton or Roquefort Blue cheese
2 tbsp. green onions
Salt and pepper to taste

Mix vinegar and mustard in a small bowl. Whisk in the olive oil in a thin stream. Add cheese, green onions, and salt and pepper. Let stand at least 30 minutes to blend flavors.

Makes 2/3 cup.
