RICE STUFFING 
1 c. rice
1 tbsp. oil
3 spring onions, chopped
1/4 c. sliced dried prunes
1/4 c. sliced dried apricots
1/4 c. chopped parsley
Salt and pepper
1/2 tsp. cinnamon
1/2 tsp. turmeric

Rinse and soak rice in hot water for 1/2 hour. Drain. Saute rice with onions in the oil; add everything else. Simmer 5 minutes. Stuff small turkey.
