ZUCCHINI CURRIED RICE | |
2 c. cooked brown rice 1/2 tsp. turmeric 1 1/2 tsp. curry powder 2 tbsp. honey 1 (20 oz.) can unsweetened crushed pineapple 2 c. grated zucchini 1/3 c. chopped chives 1/2 c. raisins Cook zucchini and chives in salted water until tender, about 3 minutes. Add raisins for last minute of cooking. Drain well. Add spices and honey to brown rice, then mix with vegetables. Drain pineapple, mix in gently with rice- vegetable mixture. Serve hot. |
