MICRO PORCUPINE MEATBALLS 
1 lb. ground beef
1 c. minced onion
1 c. uncooked instant rice
1 (16 oz.) can tomato sauce, divided
1 egg
1/2 tsp. salt
1/4 tsp. pepper
1/4 tbsp. dry mustard
1 1/4 tsp. parsley flakes

Combine ground beef, onions, rice, 1/4 cup tomato sauce, egg, salt and pepper. Mix well. Shape into 12 meatballs. Place in round 1 quart size shallow casserole.

Combine remaining tomato sauce, parsley flakes and mustard. Pour over meatballs. Cover with wax paper, cook 4 minutes on high. Rearrange meatballs, cover and continue cooking 4-5 minutes or until rice is tender and meat firm.
