MEXICAN CASSEROLE 
1 lb. ground chuck
1 med. onion, chopped
1 (16 oz.) can refried beans
1 (8 oz.) can tomato sauce
1 1/2 oz. pkg. enchilada sauce mix
1/2 c. water
1 (8 oz.) bag tortilla chips, crushed
1/2 c. Cheddar cheese, shredded
2 c. lettuce, shredded
1 med. tomato, chopped
Sour cream

Brown meat and onion; drain. Add beans, sauce mix and water. Cook on low 5 minutes. Mix well. Place chips in bottom of 12 x 9 inch casserole. Put beef mixture on top. Sprinkle with cheese. Bake 30 minutes at 350 degrees. Garnish with lettuce, tomato and sour cream.
