POTATO CANDY 
1 very sm. potato, about 1" diameter
2 lbs. powdered sugar

Boil potato in water until soft. Peel potato and mix half the potato with powdered sugar using a fork to mash together. You can keep adding powdered sugar until the dough becomes stiff. If you add too much powdered sugar use rest of potato to soften dough and if you use too much potato at once the dough will be soft.

TWO VERSIONS: 1. You can roll the dough flat to approximately 1/4" and spread peanut butter on it and roll dough like a jelly roll. Wrap in wax paper and refrigerate for about 2 hours before cutting.

2. Add 1 teaspoon of peppermint extract to dough and mix (you can add more if you like a stronger flavor). After you have mixed the dough, roll into 1" balls and flatten the balls to approximately 1/2". Melt 2 cups semi-sweet chocolate chips and a 1"x1" square of paraffin in top of double boiler. Using toothpick, dip dough into wax, place on wax paper to cool. These taste like peppermint patties. Freezes well.
