SHARA'S MEXICALI SALAD | |
3 tbsp lime, (or lemon,) juice 3 tbsp olive oil 1 3/4 tsp. sugar 1/4 tsp. cayenne pepper 1 cup peeled jicama matchsticks 5 radishes, sliced 1/2 cucumber, sliced 2 ripe avocados, halved, pitted and peeled 1 cup orange segments 6 cups mixed salad greens, such as Olivia's Organic greens. Combine juice, oil, sugar, salt, and cayenne. In a bowl, combine jicama, radishes, cucumber, and 2 tbsp. juice mix. Cut 1 avocado into 1/2" pieces, stir into jicama mix with orange segments. Let stand 10 minutes. Thinly slice remaining avocado. In a large serving bowl, toss greens with remaining juice mix. Top with jicama mix, garnish with avocado slices. Submitted by: Sherry Monfils |
