GERMAN APPLE PANCAKE 
1 c. sifted flour
1/2 tsp. baking powder
1 c. milk
5 eggs
3 1/2 tbsp. butter
2 tbsp. sugar
1 tsp. cinnamon
4 apples, peeled, thinly sliced

1. Preheat oven to 425 degrees, melt 2 tablespoons of the butter.

2. In bowl mix dry ingredients. Stir in well. Add eggs, one at a time, beat well after each. Stir in melted butter (batter will be lumpy).

3. Mix cinnamon and sugar.

4. In large 10" cast iron skillet melt 1 1/2 tablespoons butter until hot. Sprinkle cinnamon mixture over melted butter. Spread apples in the pan. Pour batter over apples, bake 20 to 25 minutes until set. Invert into a platter and serve with butter and syrup. Great for breakfast. Serves 6.
