GARLIC ROASTED POTATOES 
3/4 lb. pared potatoes, cut into wedges
1/4 c. thinly sliced onion
2 tsp. vegetable oil
1 garlic clove, peeled
1 tsp. chopped fresh parsley
1/8 tsp. salt
Dash of white pepper

Preheat oven to 450 degrees. In 8 x 8 x 2 inch baking pan, combine all ingredients, mixing well until potatoes are thoroughly coated with oil. Bake, stirring occasionally, until potatoes are tender and golden brown, 45 to 50 minutes. Remove and discard garlic clove before serving.
