STEAMED CLAMS 
3 lb. clams in shell
1 1/2 c. water
2 slices onion, optional
1/4 tsp. thyme, optional
1-2 sprigs parsley
Lemon Butter (below)

Place clams in a large kettle. Add remaining ingredients except Lemon Butter. Cover and steam just until the shells open, about 5 minutes. Serve clams with Lemon Butter for dipping. Strain broth. Reheat, season to taste and serve in cups. If additional broth is desired, add additional water.

Lemon Butter: Melt 1/2 cup butter, stir in 2 tablespoons lemon juice.
