BAKED CHICKEN WITH VEGETABLES 
1 chicken, skinned and boned (breasts)
1/2 sm. onion, chopped
1 clove garlic, minced
1 c. vegetables, fresh or frozen
1 tsp. cumin
1/2 - 1 c. tomato juice
1/8 tsp. pepper
Shredded low fat cheese

In a frying pan lightly brown chicken. Transfer to casserole dish. Stir fry onions and garlic and hard vegetables. Spoon vegetables over chicken. Add tomato juice, cumin and pepper. Sprinkle cheese on top. Cover. Bake at 350 degrees until chicken is tender.
