2 cabbage (about 3 lbs.) 3 tbsp. salt 2 c. water 1/4 c. vinegar 4 rounded tbsp. sugar 1 tsp. MSG 1/2 tsp. grated ginger (optional) Cut cabbage into 1/2 inch slices and place in a large container. Boil remaining ingredients and pour over cabbage. Mix thoroughly, stirring periodically until cool. When cool, drain. Reheat liquid and pour again over cabbage and mix. Pack in containers when cool. Note: Red pepper or chopped red ginger may be added for color and flavor. |
