PEANUT BUTTER CHOCOLATE CHIP

3 c. flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 stick (6 tbsp.) softened butter
1 1/2 c. chunky peanut butter
1 c. packed light brown sugar
2 lg. eggs
1 1/4 c. buttermilk
1 1/2 c. mini chocolate chips

Into a bowl sift together flour, baking powder, baking soda and salt. Into another bowl cream together the butter, peanut butter and the brown sugar, then add the eggs, one at a time. Add the buttermilk and mix well. Add the flour mixture. Mix unitl it is just combined, then stir in the chocolate chips.

Divide the batter among five buttered and floured loaf pans, each 5 3/4 x 3 1/4 x 2 inches. Bake in a 300 degree oven for 30-40 minutes or until a tester comes out clean. Remove from pans and cool right side up on a wire rack. Breads keep chilled for 1 week or frozen 1 month.
