CRAB & CORN CHOWDER 
2 c. fresh corn or thawed frozen kernels
1 1/2 c. potatoes, cut into cubes
4 tbsp. butter
1/4 c. carrots, cubed
1 1/2 c. celery, diced
2 c. fish broth or 1 c. bottled clam juice & 1 c. water
2 c. crab meat
Salt
1 1/2 c. chopped onions
1/4 c. red pepper, diced
1 c. half & half cream
1/2 tsp. red hot pepper flakes
Fresh ground pepper

Heat the butter in a large skillet. Add the onions, carrots, red pepper, celery and potatoes. Stir over a medium heat until the onions are wilted. Heat the half and half and add the potato mixture, with the fish broth, salt, pepper and hot pepper flakes. Add the corn and 1/2 the crab meat and stir. Simmer for 6 to 8 minutes until the potatoes are tender, add rest of crab meat, stir gently. Heat thoroughly and serve.
