MOMO'S CARROT CAKE 
CAKE:

4 eggs
2 cups all-purpose flour
2 cups sugar
3 cups grated carrots
1 tsp. vanilla
1/2 cup vegetable oil
2 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
1/2 cup chopped pecans

Preheat oven to 350°F.

Beat eggs and add rest of ingredients.

Bake at 350°F for 45 minutes to an hour or until cake tests done.

FROSTING:

1 (8 oz.) pkg. cream cheese
4 tbsp. (1/2 stick) butter
1 tsp. vanilla
1 (1 lb.) box confectioners' sugar

Beat all ingredients, then spread over cooled cake. Sprinkle 1 cup of chopped pecans over frosting.
