HEARTY LENTIL SOUP | |
1/2 c. lentils 2 c. water 1 chopped onion 3 stalks celery, chopped 1 carrot, chopped 3 tomatoes, chopped 1 clove garlic, minced 1/2 c. parsley, chopped 2 tbsp. tomato paste 2 tbsp. fresh or 1 tsp. dried thyme 2 tbsp. olive oil Salt to taste Bring lentils to boil and simmer for 1 hour. Add celery, onions, carrots; simmer for 10 minutes. Add chopped tomatoes and garlic, simmer 3 more minutes. Add parsley, tomato paste, thyme and salt. Simmer 3 minutes. Stir in oil and serve. Add water if you desire it thinner. Serves 4. |
