HEARTY VEGETABLE SOUP 
1 lb. beef, cut into 1" or smaller cubes with a trace of fat
1 lg. potato, cut into 1/2" cubes
3 stalks celery, stripped, cut into 1/2" pieces
1 c. celery leaves & stems, chopped & packed
1/2 - 1 pkg. sm. frozen peas
1/2 - 1 pkg. sm. frozen carrots
14 oz. can stewed tomatoes
1 sm. onion, diced
Bit of parsley
2 lg. marrow joint bones or 4 sm. sections

Boil bones and meat together for 1 hour. Remove bones, save fluid. Add vegetables and slow boil for 2 hours.
