HEARTY LENTIL SOUP 
5 c. vegetable stock or water
1 c. lentils
1 onion, chopped fine
1 rib celery, chopped fine
1 carrot, chopped fine
1 clove garlic, minced
1 sm. green pepper, chopped fine
1 sm. potato, peeled and diced
2 c. tomato sauce
1/2 tsp. basil

In large pot, bring stock, lentils, onion, celery, carrot and garlic to boil. Reduce heat, cover, simmer for 30 minutes or until vegetables are tender. Add remaining ingredients, cover and simmer 15 minutes or until potatoes are tender.
