HARVEST PUMPKIN LOAF | |
1 3/4 c. flour 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. salt 1/2 tsp. nutmeg 1/4 tsp. ginger 1/4 tsp. cloves 1/2 c. butter 1 c. sugar 2 eggs 2/3 c. pumpkin 3/4 c. chopped nuts 1 c. golden raisins Combine flour, baking soda, salt and spices. Cream butter, add sugar, cream until light and fluffy. Beat eggs and add dry ingredients, pumpkin, walnuts and raisins. Save some nuts for on top, sprinkle them on before baking. Bake in greased pans at 350 degrees, 65 to 75 minutes. Drizzle with glaze, when baked. GLAZE: 1/2 c. powdered sugar 1/8 tsp. nutmeg 1/8 tsp. cinnamon 1 to 2 tsp. cream Combine sugar, nutmeg, cinnamon and blend in cream until glazy. |
