CHEESY SCALLOPED POTATOES 
1/4 c. butter
1/4 c. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
8 oz. cheddar cheese, shredded
5 med. potatoes
2 sm. onion, thinly sliced

In a 2 quart saucepan, melt butter over low heat. blend in flour. Add milk all at once; cook stirring constantly until thickened, 5 to 10 minutes. Add cheese. Then season with salt and pepper; continue to cook until cheese melts. Remove from heat.

Spread half the cheese sauce on bottom of shallow 2 1/2 quart baking dish. Peel potatoes and cut into very thin slices with food processor. Arrange potatoes and onion slices over cheese sauce. Spread remaining cheese sauce over top. Bake for 1 1/2 to 2 hours or until potatoes are tender. Bake at 350 degrees. Makes 8 servings.
