BAKLAVA 
2 lbs. filo dough (2 boxes)
2 lbs. sweet, unsalted butter
2 tbsp. Crisco shortening
1 1/2 lbs. chopped walnuts
1 tsp. cinnamon

Mix 1 teaspoon cinnamon with 1 1/2 pounds of chopped walnuts. Separate into 3 parts and set aside.

Grease 12x18x2 inch baking tray with 2 tablespoons Crisco shortening. Place 2 layers at a time, generously brushing with butter without pressing down. Repeat this process using half of one box. Sprinkle one part of walnut mixture on every 4 layers of dough until using 1 box of dough.

With the second box of dough, continue buttering every other layer until finished. Do not butter top layer. Cut into squares and bake at 300 degrees for 1 1/2 hours or until golden brown. Let cool and then pour basic heavy sugar syrup to taste. Sprinkle top with finely ground pistachios.

SYRUP:

2 c. sugar
1/2 c. water
1 tbsp. lemon juice

Bring to boil and remove from heat immediately. Pour cool syrup over cool baklava.
