M.J.'S ORANGE MARINATED PORK
TENDERLOIN (EASY AND ELEGANT)
 
1 c. orange juice
1/3 c. soy sauce
1/4 c. olive oil
2 tbsp. chopped fresh rosemary or 2 tsp. dried, crumbled
3 garlic cloves, pressed
2 (12 oz.) pork tenderloins

Combine first 5 ingredients in baking dish. Add pork and marinate in the refrigerator at least 1 hour or overnight.

Preheat oven to 400 degrees. Drain pork, reserving marinade. Place pork on baking sheet and season generously with pepper. Roast until cooked through about 20 minutes.

Meanwhile, bring reserved marinade to boil in small saucepan. Slice pork tenderloins and serve, passing the marinade separately as sauce. Serves 6.

I made this for book group last night. It was awesome! I placed the meat in the marinade in the morning. I cooked it a little differently. Lightly oiled bottom of skillet and browned the meat for about 5 minutes. Then placed in 425°F oven for about 25-30 minutes (depends on thickness of loin). When thermometer registered 160°F. I placed on platter and covered w/foil until time to eat. I did, as the recipe stated, boil the sauce and let it simmer for about 15 minutes to reduce. YUMMO!!
