FAT FREE EGGPLANT 
1 egg
1/2 c. flour
1/4 c. water
1/4 Romano cheese
Garlic, salt, pepper to taste
1 eggplant

Mix above ingredients - should be like pancake mixture. Peel and slice eggplant. Put in hot water for 20 minutes; drain. Dip eggplant into egg mixture.

Spray cookie sheet with non-stick spray. Line pan with eggplant and spray top. Bake 10-15 minutes at 425 degrees. Layer with sauce and cheese in 13 x 9 inch pan and bake at 350 degrees for 20 minutes.
