MIXED VEGETABLE CASSEROLE 
2 cans mixed vegetables, drained
1 can water chestnuts
1 c. chopped celery
1 c. chopped onion
1 can cream of chicken soup
2/3 c. mayonnaise
1/2 c. grated mild cheddar cheese

TOPPING:

1 pack of crushed Ritz crackers
1 stick melted butter

Combine vegetables, water chestnuts, celery, and chopped onion in a large bowl. In a separate bowl, mix together soup and mayonnaise. Stir soup/mayonnaise mixture into vegetable mixture. Pour into casserole and sprinkle with the cheese. Mix together butter and crackers and spread over casserole. Bake at 400 degrees for 30 minutes.
