STUFFED ARTICHOKES 
4 medium-sized artichokes
4 oz. ground beef, browned
1/2 c. seasoned bread crumbs
1/4 c. grated Parmesan cheese
2 tbsp. parsley, chopped
Salt & pepper to taste

Cut stems from artichokes to make bases flat. Trim leaf tips with scissors. Cut 1/2 inch to 3/4 inch from tops of artichokes. Bang artichokes upside down on hard surface to loosen leaves a bit. Mix ground beef, bread crumbs, grated cheese, parsley and salt and pepper in small bowl. Stuff in between leaves and in center of artichoke with beef mixture. Stand artichokes upright in deep saucepan. Pour in 1 inch hot water. Drizzle artichokes with olive oil, if desired. Cover saucepan. Steam artichokes for 1 to 1 1/2 hours or until tested leaf is tender. Serves 4.
