ARTICHOKE STUFFING | |
1 lg. onion, chopped 3 ribs celery, chopped 1 c. clarified butter 1 lb. mushrooms, chopped Saute above ingredients. Leave on heat and add: Crushed thyme, to taste Crushed rosemary, to taste Chopped parsley, to taste Salt & pepper to taste 1/2 c. chopped black olives (opt.) 2 tbsp. red or pink peppercorns (opt.) 1 c. heavy cream Stir well. Remove from heat and add the following: Juice of 1 lemon Tabasco sauce to taste (4-15 drops) 1/2 c. slivered almonds Mix well. Press into a 9"x13" casserole. Bake at 325 degrees for 45 minutes or until it is bubbly and the desired degree of moisture is reached. 8 to 10 servings. |
