CUCUMBER SALAD 
2 large cucumbers
1/2 tsp. sugar
2 tbsp. red wine vinegar
1 scallion, chopped (include green)
1/2 c. plain fat-free yogurt

Peel and seed cukes. Cube cukes. Mix with sugar, vinegar and scallion. Let sit a few minutes. Stir occasionally. Put yogurt into a bowl. Pour juice off cukes and into yogurt. Combine well and add cukes. Toss.
