WELSH RAREBIT 
1/2 lb. American cheese, crumbled
1 tbsp. butter, melted
1/8 tsp. mustard
1/8 tsp. salt
Dash cayenne pepper
1 egg
1/4 c. milk
1 can condensed tomato soup (optional)

Add crumbled cheese to melted butter and seasonings. When blended, add egg beaten with milk and cook on low heat until cheese is melted. Serve on crackers or toast. For tomato rarebit, add tomato soup.
