MOM'S SPANISH CHICKEN | |
1 whole chicken 1 large onion 2 large cans diced tomatoes 1 can diced Rotel tomatoes 1 can green chilies 1 pkg. UNCLE BEN'S® Wild Rice 1 large can tomato paste 2 c. chicken broth Salt and pepper to taste Bell pepper 2 bay leaves Olive oil Large tortilla (optional) Boil chicken; skim fat off. Add salt, pepper, and bay leaves. Reduce heat and cook for 1 hour and 15 minutes. Save broth. Sauté onion and bell pepper in olive oil. Add tomatoes, Rotel, and rice. Debone chicken and add to mix. Cook additional 30 minutes over medium low heat. Serving idea: Serve wrapped up in warm tortilla. Serves many people! |
