CHEESE BOMBAY 
8 oz. cream cheese, softened
6 oz. grated sharp cheddar cheese, room temp.
1 tbsp. curry powder
2 tbsp. sherry
3 lg. cloves garlic, minced
1/2 c. mango chutney
2 tbsp. minced scallions

Mash cream cheese; add cheddar cheese. Blend well. Add curry powder, sherry and garlic. Blend. Form into a log or ball. Chill several hours or overnight. Before serving, frost with chutney and sprinkle with scallions. Serve with crackers or party rye.
