OYSTER JAMBALAYA 
2 1/2 cups rice, washed
3 cups water
1 (8 oz.) can tomato sauce
2/3 (6 oz.) can tomato paste
3 dozen oysters
1/2 tsp. black pepper
1 tsp. sugar
1 lb. salt pork
3 large yellow onions, chopped
4 cloves garlic
1 bell pepper, finely chopped
2/3 cup vegetable oil
2 tsps. hot red pepper sauce

Cut pork in small pieces. Fry in hot cooking oil. When brown add onions. Brown thoroughly. Add tomato sauce and paste with sugar. Cook 10-12 minutes, stirring constantly. Add drained oysters and bell pepper. (Save oyster water to use later.) Lower heat and cook about 5 minutes. Add uncooked rice, raise heat and let fry about 10 minutes, stirring constantly making sure to scrape bottom of pan. Add garlic, black pepper and pepper sauce. Add water, lower heat, stirring occasionally for 10 minutes. Cover and let steam for about 30 minutes. Shrimp may be substituted for oysters. Serves 6.
