BAKED CASHEW LOAF 
2 tbsp. oil
1 c. onions, finely chopped
1 c. celery, diced
1/2 c. cashews
1 c. whole wheat bread crumbs
1 tsp. salt
1/2 c. milk
2 eggs, beaten

Preheat oven to 350 degrees. Heat oil in skillet over moderate heat. Saute onions until lightly browned. Combine in a bowl with the rest of the ingredients. Place in a lightly-greased loaf pan and bake for 40 minutes. Yield: 4 servings.
