GINGER COOKIES 
1 c. sugar
1 c. molasses
1 tsp. baking soda (dissolved in a little hot water)
2 tsp. ginger
1 tsp. cinnamon
1 c. melted shortening
1 c. cold black coffee
1/4 tsp. salt

Add enough flour (5 to 6 cups) to make a soft dough. Roll out and cut out with cookie cutter. Bake at 425 degrees for 8 to 10 minutes.
