ZUCCHINI SPICE COOKIES 
3/4 c. shortening
1/2 c. sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
1 tbsp. cinnamon
1 1/2 tsp. salt
1 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. nutmeg

Cream shortening and sugars. Beat in eggs and vanilla. Sift flour, cinnamon, salt, baking powder, soda, and nutmeg. Add dry ingredients alternately with 2 cups peeled and grated zucchini. Stir in 3/4 cup chopped raisins and 1/2 cup nuts. Drop on greased cookie sheet and bake 8-10 minutes at 375 degrees. Frost, if desired. Makes 6 dozen.
