IRISH BATTER BREAD - 1 LOAF 
2 tbsp. shortening
3 c. sifted flour
1/2 c. sugar
4 tsp. baking powder
2 tsp. cinnamon
1 tsp. salt
1 egg, well beaten
3 tbsp. grated orange peel
1 c. currants

Melt shortening, set aside. Sift together all dry ingredients. Set aside.

Mix until blended 1 egg, 1 1/2 cup milk, 3 tablespoons orange peel, grated, blend in melted shortening. Make a well in dry ingredients and add liquids all at once with 1 cup currants.

Beat until smooth. Turn into greased 9 1/2 x 5 1/4 x 2 3/4 inch loaf pan. Let stand at room temperature 20 minutes. Bake at 325 degrees for 1 hour to 1 hour 15 minutes until bread tests done.
